Mauro Colagreco

Nourished by travel and discovery, Mauro Colagreco’s DNA carries a genuine sensitivity to nature. Driven to the pinnacle of his art by his boldness, vision and commitment, he now runs more than 25 establishments around the world (London, Tokyo, Hong Kong, Singapore, Dubai, Palm Beach, Buenos Aires…), including of course Mirazur***, his flagship in Menton, elected best restaurant in the world in 2019 by The World’s 50 Best Restaurants. Keen to see the emergence of a circular gastronomy, respectful of nature’s cycles, Mauro Colagreco strives every day to contribute, as best he can and on his own scale, to the environmental transition. With a 5-hectare permaculture and biodynamic farming project, Mirazur is also the world’s first Plastic Free-certified restaurant in 2020, and in 2022 Colagreco becomes the first chef to be named a UNESCO Goodwill Ambassador for biodiversity.

About circular gastronomy

Circular gastronomy is a culinary movement initiated by Mauro Colagreco in Menton in 2006. Inherently respectful, visionary and, above all, with a sense of identity, its vocation is to reconnect deeply with nature and to reconcile the perfect mastery of haute cuisine techniques with a genuine commitment to society, in which research & development plays a key role. A gastronomy that respects life and encourages ultra-fresh, local, seasonal consumption, while preserving plant and animal biodiversity.

Initiative

Plastic Free Certification

Plastic Free Certification was created in 2018 by a group of 12 members, coming from different worlds but connected by an invisible thread: the protection and safety of the planet and human beings. They are associated with ASviS, itself founded in 2016 with the aim of raising awareness of the importance of the Agenda 2030 goals for sustainable development, by mobilizing Italian society, its economic and social players and its institutions. The initiative proposes to certify companies and establishments that are actively committed to reducing their use of single-use plastics. It also promotes awareness of the environmental impact of plastics and encourages the transition to more sustainable practices.

Organization

UNESCO

The only United Nations organization with a mandate for education, science and culture, UNESCO develops and coordinates global standards and programs, linking nature and culture to conserve biodiversity and ensure its sustainable use. The organization manages three major frameworks for the protection of natural areas, which interact and complement each other: World Heritage, the Man and the Biosphere Programme, and Global Geoparks. UNESCO also supports numerous research programs and networks to find solutions and share knowledge.
