Iced cherry soup with spices and Armenian wine

Ingredients :

  • 800 g cherries
  • 25 g Armenian red wine
  • 10 g cornstarch
  • 80 g sugar
  • 1 cinnamon stick
  • 1 star anise
  • 2 Cloves
  • 20 g Kamelya chai tea

Preparation :

1) Wash and stem the cherries.

2) Bring the wine to the boil with the sugar and spices, then flambé as soon as it starts to boil.

3) Add the cherries and cook for 5 minutes.

4) Remove the cherries from the wine and bind with the cornflour mixed with cold water.

5) Return to the boil with the cherries for 5 minutes to finish cooking.

6) Remove from heat, leave to cool and chill for 3 h.

7) Serve chilled, with ice cream or sorbet if you like.
