Crunchy walnut and apple salad

Walnuts are found in all temperate zones of the planet. They are rich in nutrients and have a relatively small environmental footprint. Of course, they should be organic if possible.

Ingredients for 2 people

    • 50 g walnut kernels.
    • 1 apple (Granny Smith or Pink Lady).
    • 100 g lamb’s lettuce or arugula for example
    • 50 g cheese (optional: goat, blue or feta).
    • 2 tablespoons olive oil.
    • 1 tablespoon balsamic vinegar.
    • 1 teaspoon honey (optional).
    • A pinch of salt and pepper.

Prepare the ingredients

Wash and spin-dry the lettuce.

Thinly slice or dice the apple.

Crumble the cheese if necessary.

Toast the nuts

In a fat-free frying pan, toast the walnut kernels for 2-3 minutes to bring out their flavor.

Prepare the vinaigrette

Mix the olive oil, balsamic vinegar, honey, salt and pepper in a bowl.

Assemble the salad

Arrange the salad on a platter and add the apples, toasted walnuts and cheese.

Pour in the vinaigrette and toss gently.
