Keen to see the emergence of a circular gastronomy, respectful of nature’s cycles, Mauro Colagreco strives every day to contribute, as best he can and on his own scale, to the environmental transition. With a 5-hectare permaculture and biodynamic farming project, Mirazur is also the world’s first Plastic Free-certified restaurant in 2020, and in 2022 Colagreco becomes the first chef to be named a UNESCO Goodwill Ambassador for biodiversity.
