Travel has played an important role in shaping Chef Arden Lewis’s culinary philosophy. From the floating markets of Bangkok, to preparing dinner with a family in Morocco, to learning traditional cooking in Tokyo, the chef enjoys this strong relationship between culture and food. With a distinguished career in the kitchen, he is now Executive Chef of the Comal Heritage Food Incubator, a restaurant that doubles as a catering business training program in support of immigrant and refugee women. For Arden Lewis, Comal is the perfect blend of cuisine, culture and community, values that are close to his heart.
