Canada: National Aboriginal Day

Every June 21, Canada celebrates National Aboriginal Peoples Day to recognize and honour the heritage, cultures and valuable contributions of First Nations, Inuit and Métis peoples to Canadian society. To mark the occasion, the Fairmont Château Laurier hotel in Ottawa is organizing a culinary week. On the program: Chef Trudy Metcalfe-Coe and Chef Joseph Shawana. If you miss his performance in Ottawa, you can still make a stop in Toronto to meet Joseph Shawana at his Ku-Kum Indigenous Kitchen restaurant, where he puts his classical training to good use in a cuisine based on the traditional products of his Odawa culture.
