Maria Kalenska

Maria Kalenska, born in Odesa, is a renowned food writer and culinary expert. She founded Ukraine’s first cooking school, where she worked for five years before relocating to the United Kingdom. Maria contributed to the EU Geographical Indications (GI) project, helping to create Ukraine’s first food and wine route, and founded Bessarabian Tours. She also ran the cookery school at Eastnor Castle in 2020 and volunteered as a chef, alongside Carousel restaurant, to support London hospitals during the pandemic.

Maria collaborated on the “Best Riedel Glass for Odesa Black Variety” project to promote Ukrainian wine. In 2021, she moved to Berlin, where—following the full-scale Russian invasion of Ukraine—she co-launched the “Bake for Ukraine” initiative to address the food crisis caused by the war. Today, she divides her time between Germany and Ukraine and is working on a cookbook dedicated to the family cuisine of Odesa.

Bake For Ukraine

Bake for Ukraine is a non-profit organization that shares traditional Ukrainian bread recipes and collects donations to help Ukrainian bakeries contribute to the security of the local food supply during the war.

It was launched by people who share a common passion for artisanal bread. Coming from diverse backgrounds — Ukraine, Slovakia, Germany, and Russia — they bring together a strong international network within the food sector, particularly in baking. Driven by chefs, pastry chefs, bakers, and food professionals, the organization harnesses the unifying power of gastronomy to support Ukrainian populations affected by the conflict.

Bake for Ukraine aims to secure the local food supply by supporting local bakeries and farmers, mainly in the cities most impacted by the war. The organization currently supports bakeries in Kyiv, Bucha, Kherson, Odesa, and Kharkiv by providing essential ingredients, supplying and maintaining critical equipment, and covering bakers’ salaries.

In addition, two mobile bakeries have been acquired in Odesa to operate during power outages and deliver bread to frontline towns and villages.
