Mayonnaise is an emulsion, i.e. a colloid of two or more immiscible liquids, where one liquid contains a dispersion of the others. In other words, an emulsion is a special type of mixture obtained by combining two liquids that don’t normally mix.
Today we must understand that everything that seems different, new, impossible, distant, complicated, sometimes utopian to us, can be coordinated with our habits, our divergent interests, our diverse activities, our multiple origins.
It is by combining things that might first appear antagonistic that we will find solutions to improve the world.
Making mayonnaise means taking simple ingredients, mixing them and, with a little effort, obtaining a sauce loved by everyone, so simple and yet so rich.
In French the expression “get the mayonnaise to take” is often used to show that we have successfully initiated a process that will produce a result.
We believe that all good initiatives, small or large, have the merit of being inspiring ingredients conducive to emulsion!
