Virgilio Martinez

When Virgilio Martínez, one of the world’s most acclaimed chefs, heard from customers at his Lima restaurant that they felt as if they were in London or New York, what was once a “compliment” became a wake-up call: “something was not right“. Mater Iniciativa

In 2012, Virgilio and Malena Martínez founded the Mater organization. The scientific approach to surveying Peru’s endemic species has evolved into a broader project involving understanding indigenous cultures and working to respect the environment. In Lima, but also from his new concept, Mil Centro in Moray (3,800 meters above sea level), products are catalogued and tested for culinary application. Partnerships are set up with local communities to generate income while maintaining their traditions (Mater Sostiene).
