Tataca is a traditional Amazonian soup from the state of Pará.
This preparation highlights several key elements of Amazonian cuisine.

Made with tucupi, jambu and shrimps, this recipe is rich in flavor and color. Tucupi is a typical Amazonian juice, made from a broth of cassava roots to which chili pepper is added.

Tataca can be found all over the north of the country, and the best place to eat it is in a tacazeira, a popular little food hut.

Ingredients for 6 servings
  • 2 l tucupi
  • 4 garlic cloves
  • 4 small sweet peppers
  • 2 bunches jambu
  • 500 g dried shrimps
  • 90 g cassava gum
  • Salt

Pour the tucupi into a saucepan and bring to the boil with salt.
Reduce heat, cover and cook for 30 min.

In another saucepan, cook jambu in water until tender, drain and set aside.

Remove the heads from the shrimps, then soak them in a bowl of water to remove excess salt.
Bring 4 cups of salted water to the boil, dilute the cassava gum in a bowl of cold water, then add it gradually to the boiling water, the aim being to obtain a thick porridge.

Serve the soup in a bowl in the following order: 2 tablespoons of tucupi, a ladleful of cassava gum, a ladleful of tucupi, a few jambu leaves, then 5 shrimps.
Season to taste with salt and pepper.
