Julien PILATI

Originally from the Champagne region of France, Julien Pilati grew up in his family’s restaurant, developing an early passion for authentic products, terroir, and culinary excellence. He refined his craft alongside some of France’s most renowned chefs, including Alain Ducasse, Hélène Darroze, Michel Sarran, Arnaud Lallement, and Reine Sammut, shaping a culinary philosophy where technique serves both emotion and the integrity of the product.

Today, together with his wife Laetitia, he leads Maison Joia in Nice, an independent fine-dining restaurant that celebrates French terroirs through a unique dialogue between his Champagne roots, his wife’s Breton heritage, and the Mediterranean identity of the French Riviera. His cuisine is elegant, heartfelt, and deeply connected to nature, highlighting seasonal, organic, and predominantly local ingredients.

Committed to a more sustainable gastronomy, Julien Pilati champions short supply chains, respect for producers, and environmentally responsible practices. This commitment has earned Maison Joia recognitions such as the FiG Eco-Responsible Table label and the Green Key certification. Through his work, he embodies a new generation of chefs for whom culinary excellence, authenticity, and environmental responsibility go hand in hand.

Teragir is a French non-profit organization recognized for its public interest mission, working for over 40 years to promote environmental education and sustainable development. It mobilizes citizens, youth, local authorities, businesses, and schools around concrete actions that encourage responsible lifestyles and environmental protection.

  • Blue Flag, an international label awarded to beaches and marinas committed to high environmental standards,
