Mykola Nevrev is a committed Ukrainian baker specializing in sourdough bread and natural fermentation.
He is the founder of Bloom bakery (based in Slovakia, where he settled), an artisanal project recognized for its demanding approach to breadmaking, grounded in long fermentation, high-quality flours, and respect for living processes.
Through his work, he defends sourdough as an ancestral craft and a cornerstone of food culture.
He is also the author of a book dedicated to sourdough, in which he shares his expertise, philosophy, and natural breadmaking methods: Blooming Sourdough and Other Stories.
In 2022, he co-founded Bake for Ukraine in response to the Russian invasion.
The initiative directly supports Ukrainian bakeries in order to help secure local food supply.
For him, bread is both an essential food and an act of collective resilience.
His commitment bridges craftsmanship, culture, and solidarity.
Mykola Nevrev embodies a generation of bakers for whom the artisanal gesture becomes a human and political commitment.
