After gaining experience within the family business in marketing, purchasing, and retail operations, he chose to follow his own path by dedicating himself entirely to the craft of baking. <\/p>\n\n<p class=\"wp-block-paragraph\">Driven by a passion for natural fermentation and heritage grains, he trained alongside skilled artisans before founding Atelier P1 in Paris in 2019. His bakery quickly became a benchmark for its commitment to naturally leavened bread, ancient wheat varieties, and organic cereals. Each loaf reflects a deep respect for terroir, traditional craftsmanship, and close partnerships with farmers who cultivate biodiversity-friendly crops.  <\/p>\n\n<p class=\"wp-block-paragraph\">Deeply committed to a more sustainable food system, Julien Cantenot promotes a vision of baking in which the quality of ingredients, fair compensation for producers, the transmission of artisanal know-how, and environmentally responsible practices are inseparable.
