After a high-flying career as a Michelin-starred chef that took him from France to New Zealand, via Russia and Mauritius, Marc de Passorio has settled in Canada, where he is now FNB Director for the Fairmont Group. It was an assignment at the H\u00f4tel-Mus\u00e9e Premi\u00e8res Nations’ La Traite restaurant that brought him to Quebec two years ago. He began by setting up a trailer to criss-cross the region, immersing himself in First Nations culture and reaching out. He was keen to integrate young people from disadvantaged backgrounds into his kitchens, helping to restore their hope and pride. As a result, the restaurant has made an impressive qualitative leap forward in promoting First Nations products and culinary traditions. Despite his new role, he remains deeply attached to them and supports the Nouveaux Sentiers Foundation<\/a>.<\/p>\n\n
