At the Auberge de l&#8217;Ill, a family-run establishment with two Michelin stars, he has modernized traditional cuisine while preserving its excellence. The chef has always been committed to issues he feels strongly about. For example, he collaborated with physician Claude Deroussent and illustrator Phil Umbdenstock on a book whose recipes were sent in by inmates of French prisons: <em>Je cuisine pour moi tout seul<\/em>. He likes to show his solidarity with students by occasionally cooking a gourmet meal for less than \u20ac4 for 1,500 students at Strasbourg&#8217;s university restaurant.
