His philosophy is based on using local food while avoiding waste. After working in kitchens all over the world, he now excels at his craft in his native Philippines. His cuisine is developed with his team around the use of local, organic and traceable ingredients, as well as relationships with people who have a positive impact on the Philippines. With his restaurant Toyo Eatery, this committed chef aims to support local communities.
